A van fridge is a daily load. Size for watt-hours over a parked day, then check whether you actually need a 30A socket.

If the van already has a house battery and you only need AC for a laptop and a blender, a 500Wh station is plenty. The jump to ~1,000Wh is for running a compressor fridge from AC, charging tools, or covering a day without driving.
The EcoFlow DELTA 2 is 1,024Wh, 1,800W continuous, and 500W solar input on the published sheet. That solar ceiling is the useful extra for a parked van: a pair of 200–220W panels can put back a meaningful chunk of a fridge day in decent sun.
When the 30A outlet matters
Some RV air conditioners and onboard chargers want a TT-30 (30A) inlet. Most 1kWh stations only have household 15A outlets. The BLUETTI AC200L lists a 30A RV outlet, 2,048Wh, 2,400W continuous, and 1,200W solar input. It also weighs 61.6 lb. That is a bay item.

You do not have a 30A inlet and you will not run a roof air conditioner from the station. Paying for the AC200L class only for a 12V fridge is extra weight. A window or rooftop AC still has to fit inside 2,400W running and the listed surge; many will not.
